Christmas is over, and time to catch up on some great recipes I found this holiday season. First off, Christmas was great. It was the best one yet. The girls are spoiled. I will leave it at that.

So, how do you decorate cookies with a little one that can not eat them? You make egg free, wheat free, nut free, soy free cookies. Yup. Sounds terrible? Not if you do not know any different! I have to say, they were not terrible, just a little dry. A little dairy free frosting could have helped! 😉

We had a cousin cookie party…. It was a MESS! But so much fun! (regular sugar cookies and frosting for the big kids to decorate)



 Sugar Cookies 

Here is the recipe:

1/2 cup vegan butter

1 cup sugar

1 tablespoon ground flax + 3 tablespoons water (substitute for one egg)

1 tsp vanilla extract

3 cups gluten free flour

1/3 cup dairy free milk

  • Create the egg: combine water and flax, set aside. (this takes a minute to thicken to the egg consistancy)
  • Mix together butter and sugar, until creamy
  • Add egg substitue and vanilla
  • Add milk and flour
  • Cover and refrigerate 3 hours or over night
  • Preheat oven to 375 degrees
  • Roll in sprinkles if desired and form cookies
  • Bake 10-12 minutes, or until golden brown. Do not overcook or they will be dry!

 

 Hazel enjoys these. A lot. She goes to the counter after every meal and yells “that” hoping to get her special treat! How do you say no to that?!
